Thanks for review! I've sent v4 to address all your comments. I've also 
noticed that I had inconsistent config option naming:

+static bool ovl_uuid_off_def = IS_ENABLED(CONFIG_OVERLAY_FS_UUID_OFF);

this is also fixed.
