... and so I'm hoping this VM is an x86_64 system.

What is the nfsd thread count on the server? 'pgrep -c nfsd'
What version of NFS does your client mount with?
What is the speed of the network between your client and server?
What is the type of the exported file system?
Do you use NFS with Kerberos?
