Why not do:
  PATH=~/git/llvm/build/bin:$PATH make samples/bpf/

..if you wish to override clang/llc only for building bpf samples?
Or, just export the updated $PATH:
  export PATH=~/git/llvm/build/bin:$PATH
  make samples/bpf
