As Dominique suggested I implemented conn_cancel to ensure the
connection to be removed on the gadget side. Regarding the stopped
correspondence from the host-side, there is not much we can do.
However for the v4 I ensured that a mount -f would work out
by checking the connection status before sending anything
to the host.
With this changes I was able to mount and unmount several times
and always reuse the gadget connection by restarting the host side.

Fair point about the mount_tag. I reworked it to be used like with ffs.
